    Easter 2017 Chocolate Baking Tips

As you know, we have a large selection of Easter chocolate molds. Here are a few helpful tips on how to make you chocolate lollipop using Easter molds in our store.

    1. The Chocolate:
    We reccomend using confectionery coating. It contains vegetable fat rather than cocoa butter, which makes it much more stable. Confectionery coating is great to use when you’re making candies with kids. It also comes in a variety of colors and flavors.

    2. Candy Equipment:

    3. Chocolate lollipops:

    4. Filling the Molds

    Fill each mold slowly with a squeeze bottle, spoon, or by pouring chocolate from a measuring cup. Using your palette knife or spatula, scrape off any excess chocolate into a clean bowl; it can be gently warmed and reused. Once the back of the mold is smooth and even, gently tap the tray of chocolates on the countertop to pop any air bubbles. If you’re making lollipops, insert the sticks, twisting gently so that they’re completely coated with chocolate. To make the chocolate harden quickly, put it in the freezer for a few minutes. Once the chocolate is firm enough to come out of the mold, invert the entire mold onto a clean towel and twist very gently to release the chocolates.

    5. How to Melt Chocolate

    When melting chocolate or confectionery coating, there are a couple of things to remember. Don’t let water or other liquid come in contact with it, or it will seize. Don’t allow it to get too hot, as excess heat will both cause the chocolate to separate, rendering it unusable. You can check the temperature of the chocolate by dabbing a small amount of it on your lip or the inside of your wrist. It should feel warm, not hot. Coating chocolate and some brands of couverture come in small discs for easy melting. There is a very easy way to melt chocolate in a microwave. Place it in a microwave-safe bowl and zap it on high power at 10-second intervals, stirring each time, just until it’s completely melted.

Here is a great recipe for shamrocks chocolate marshmallow lollipops that could be made with chocolate molds available at our stores and online.Share the luck of the Irish on this St. Patrick’s Day by making these chocolate shamrock marshmallow pops for classmates, friends and coworkers.
    You will need the following ingridients:
    Dark chocolate merckens melting wafers
    - Miniature marshmallows
    - Green food coloring
    St. Patrick's Day Clover Mold
    Preparation:
    Microwave chocolate melting wafers in 30 second intervals, stirring until smooth in microwaveble safe bowl.Spread a generous layer of chocolate in each cavity of shamrock molds making sure to coat sides well. Dip the end of your lollipop stick or paper straws in chocolate and place into cavity so that 3/4 of the shamrock contains the end of the stick.
    While the chocolate is setting, microwave miniature marshmallows in a separate microwave safe bowl in ten second increments. Add a few drops of green food coloring and stir until smooth.
    Working quickly, as the marshmallow will set fast, transfer marshmallow to a plastic piping bag. Cut off the tip and pipe marshmallow into the center of each cavity until they are approximately 2/3 full.

    CAUTION: melted marshmallow gets hot - wrap a dishtowel around piping bag if necessary. Piping bag can be re-heated in 5 second intervals if marshmallow starts to set.
    Cover marshmallow and completely fill each cavity with remaining melted chocolate, reheating as needed.
    Gently tap mold on flat surface to release any bubbles and allow chocolate to settle.
    Allow to harden completely either at room temperature or in the refrigerator before carefully un-molding.

    Here is a basic way of how to make homemade chocolate lollipop molds. Using candy molds and candy melts makes creating homemade chocolates super easy. It makes a great cooking activity for kids. Candy molds come in any size, for every holiday, have lots of fun shapes and are fairly inexpensive at our stores in New York. These are so easy to make and fun for the kids and you, that it is worth having candy molds on hand for every occasion. Once you make your chocolates they can be stored in the freezer.

     

    Candy Mold Chocolates Recipe:
    1. Melt the candy melts in a microwave safe dish for 30 second intervals. Stir and continue to melt.
    2. When done drip chocolate into candy molds, with a spoon. Fill to the top. Wipe edges of each mold clean with your finger so there is no more chocolate on the edges.
    3. Tap candy molds on counter to get rid of air bubbles. Place in freezer 10 minutes or until under side of mold is frosty. Turn mold upside down on a sheet of waxed paper and molds will fall out if need you can bend and shake mold to get them out.
